Proof Kitchen & Bar is a restaurant in Manassas, located at 9861 Discovery Blvd, Suite 115. It has a wide menu, featuring American and globally inspired cuisine. We went on May 19, 2026, after school. When we got to the restaurant, we were greeted with dim lighting, and the hostess guided us to our table, which wasn’t a traditional table, but a couch, 2 chairs, and a mini table for food. It was unusual, but cool. We got an appetizer, drinks, main courses, and a dessert. It is a slightly expensive place, and our total came out to around $82. The service was fast, and the entire experience lasted around 1 hour.
Jackson’s Review of Proof Kitchen & Bar
I had never been to Proof before, so this was an exciting trip to take. Briy and I kind of chose a restaurant at random, so there was an element of surprise, even though we mostly planned out what we wanted to eat while looking at their online menu before we arrived.
To drink, I got a peach mocktail, which is a non-alcoholic version of a cocktail. This was really exciting to see on the menu. If a place ever has a mocktail as a drink option, I will order it, as I love mocktails. This one was really flavorful and sweet, and it was amazing.
For an appetizer, Briy and I ordered buffalo chicken egg rolls, which were the special item on the appetizer menu that day. There were 4 egg rolls, 2 for each of us. These were incredibly delicious, slightly spicy, and they were flavored very similarly to the buffalo chicken dip here at Osbourn, which is my favorite menu item.
For the main course, I got the fish & chips. I don’t usually like seafood aside from shrimp or tuna, so I don’t really know what I was thinking, but it was decent. It was pretty good compared to the other seafood I’ve had throughout my life, although the tartar sauce on the side was disgusting. The fish came with seasoned fries and coleslaw. Call me weird, but I don’t like much seasoning on my fries. My ideal fries are McDonald’s or Burger King Fries, and Briy got mostly unseasoned ones, so we switched. Both types of fries were good, but I preferred the unseasoned ones. The coleslaw was extremely good and just tasted like normal coleslaw.
For dessert, we got the s’mores, which was a “chocolate mayo cake with molten ganache in a jar, house-made marshmallow, and graham cracker crisps”. This was very good, but small. It almost tasted exactly like a campfire s’more, and it was very rich and chocolaty. Overall, this was a very good restaurant, with a lot of great menu options. If you’re looking for a nice sit-down place with dim lighting, this is the place to go. It’s not very far away from Osbourn, which is really nice. Overall, I would give this restaurant an 8/10. It had really cool food options, nice lighting, and seating, but I did not really like the fish and chips, although that was a mistake to order on my part. It also felt a bit too fancy for my taste, but that’s just me.
Briy’s Review of Proof Kitchen & Bar
I had never been to Proof before this review, but it was very surprising for us both. I personally really enjoyed it, and I would definitely go back again based on this experience.
When we first walked in, we were greeted by a hostess. We didn’t know if we were allowed in at first because it seemed like more of an 18+ place, but we were greeted in. We ended up sitting in the lounge area and sat for a few minutes before a waiter eventually came over and got us our drinks and such. He offered us the buffalo chicken egg rolls as an appetizer, which I really enjoyed personally. I don’t know what it was, but I loved the richness of them and how they kind of tasted very cheesy. I ended up taking the last one home. I also loved the sauce that came with it; it kind of tasted like Chick-fil-A sauce, which is probably why I liked it so much.
I ended up having the Chorizo Smash Burger without tomato, and I really enjoyed it. I loved the cheese pull I had, and the meat tasted amazing. There was a bunch of arugula, but I couldn’t taste it, so I didn’t really care. Everything about the burger has its part; the potato bun, the patties, the cheese, etc., so I really enjoyed the taste. I only ate about halfway because we were gonna get dessert. I also got fries, which were very crispy and very good. They were cooked perfectly, and I really liked them. But, since Jackson got fish and chips, he had Old Bay seasoning on his fries. He doesn’t particularly like seasoning on his fries (other than salt, hopefully), so I switched with him. I thought these were even better because my entire family is in Maryland, so I always have Old Bay on everything. I really enjoyed these, and I would eventually finish this meal at home.
Then, there was dessert. I was pretty full by this point, but we decided on s’mores. I don’t know what I was thinking, because I hate marshmallows, but I thought it was more of a bigger dish where you could take it off. It was very small, precisely in a small mason jar, and the marshmallow was covering pretty much everything. I ate one graham cracker and Jackson ate the other. He ate pretty much the entire marshmallow because I told him I hated marshmallows, and we ate the cake together. I thought the cake was very good, and the graham cracker tasted like it was made just then. The cake and marshmallow practically melted in your mouth, and I really liked that.
Overall, I would give a 9/10. I would definitely come back. Some things I would keep in mind, though, are probably placing a reservation before you come. The place was filled, and it seemed like you needed a reservation. I really enjoyed it, though. It’s pretty much in Bristow, though. It was pretty much in the middle of nowhere; just trees and roads. I really did like the scenery, though. I would definitely come back whenever I’m on that side of town

I’ve been to Proof before and it was delicious. The staff there was also very nice to me and my family. Like Jackson, I really love a mocktail, and I definitely recommend this restaurant.
